Wash the fava beans and cook them with the chopped onion over low heat in a saucepan. When they are soft, remove them from the heat and allow cooling. Place the fava beans in a dish with a drop of lemon juice, EVO oil, salt, and pepper. Finally, garnish with Pecorino Toscano DOP slices and parsley. Mix the ingredients and serve.
